Vikki was a chiropractor and her husband Danny ran a tree service. They wanted land where five kids could be outside, not a second career in cattle.

They bought about 70 acres in Florida and started with four cows and a couple of donkeys kept as pets. Neighbors taught them the parts they did not know.

Nine years on, Vikki says the place holds more than 200 animals, a growing wagyu herd and a farm store averaging about $10,000 a week. Feed bills, she says, have hit about $20,000 a month.

She does not describe a tidy plan. The sales number is hers. The story is how a family pasture turned into a counter.
