Patrick did not come up through restaurant kitchens. He sold Cadillacs, did lawn work and kept up parks while his wife tested pizza dough at home.

Friends ate the early pies. The couple then spent about $1,500 of savings on a wood-fired oven and started charity pop-ups on weekends, still working full time and raising kids.

A used pizza trailer cost about $15,000. Patrick says the next step was an old dentist's office bought for under $40,000. Turning that building into Gus Franco's Pizza took more than two years.

What the episode stays on

The Upflip sit-down is about those weekend shifts, not a polished launch. Patrick talks through how the trailer taught service before the dining room existed.

He treats the shop as a family project built in public. The dollar figures are his account of the build, not an outside audit.
