Mariah had worked restaurants from fast food to fine dining. A lost bartending job and a corporate role she did not want left her at home during the pandemic with a $20 griddle.

She cooked tacos she had seen online, posted them and got a comment telling her to sell them. Cars lined up outside the apartment building for food from a small kitchen.

She moved into a ghost kitchen and kept the same rule: no paid ads, show up, treat people decently. She says the truck side of the business now runs about $41,000 a month in Charlotte.

A comment that became a line

The Upflip episode stays on the apartment hallway and the ghost kitchen, not a fleet. She talks about consistency as the whole marketing plan.

The monthly figure is hers. The start was a griddle and a stranger telling her to charge for the tacos.
